Baba Ghanoush

As tasty as it sounds and tastier than it looks. Like hummus, but aubergines. And tahini, lemon, olive oil, garlic. The skill to a good baba is getting that perfect balance between these ingredients. Be careful with the tahini. And the lemon, and the garlic - they can be overpowering. As ever, let your hair down with the olive oil - an essential lubricant man or woman can never consume too much of. Ideally you’d cook the aubs on the bbq as that smokiness is v tasty, but you can roast them in oven too - still tasty.

 

 

INGREDIENTS:

-4 medium aubergines

-2 tbsp tahini

-juice of 1 lemon

-4 tbsp good extra virgin olive oil

-1 garlic clove, crushed

-salt, good pinch

 

METHOD:
  1. Grill the aubs on the bbq for 15-20 mins until black, almost crisp and flesh is soft inside.
  2. Let cool, then chop off stalks and peel off the black skins with a knife. Try not to waste too much flesh.
  3. Roughly chop the flesh and put in a bowl with the other ingredients. Stir well to combine!
