Pantesca Salad
This is a typical dish from the island of Pantelleria (south of Sicily), from which it takes its name. Pretty simple to make and the potatoes give it good sustenance so makes for a good lunch on its own.
INGREDIENTS:
-1 small red onion
-a few potatoes (same size)
-some nice tomatoes
-olive oil
-capers (ideally from the island of Pantelleria!)
-olives
-dried oregano
METHOD:
- Boil the potatoes (skin on), starting from cold water. Then let them cool, peel them, chop up and season with salt and olive oil.
- Cut the tomatoes into quarters, thinly slice the onion and put into a bowl. Season with salt. Add the olives and capers too.
- A sprinkle of oregano, add the potatoes to the bowl and finally a splash of olive oil to finish!
- Mix it all together and leave it to sit for half an hour for all the flavours to marinate.
