Pantesca Salad

This is a typical dish from the island of Pantelleria (south of Sicily), from which it takes its name. Pretty simple to make and the potatoes give it good sustenance so makes for a good lunch on its own.

 

 

INGREDIENTS:

-1 small red onion

-a few potatoes (same size)

-some nice tomatoes

-olive oil

-capers (ideally from the island of Pantelleria!)

-olives

-dried oregano

 

METHOD:

  1. Boil the potatoes (skin on), starting from cold water. Then let them cool, peel them, chop up and season with salt and olive oil.
  2. Cut the tomatoes into quarters, thinly slice the onion and put into a bowl. Season with salt. Add the olives and capers too. 
  3. A sprinkle of oregano, add the potatoes to the bowl and finally a splash of olive oil to finish!
  4. Mix it all together and leave it to sit for half an hour for all the flavours to marinate.
